Here is a slightly different version of your good-old carrot juice recipe.
I’m using fennel which is an unusual ingredient for me.
I’ve never tried juicing fennel until recently. Turns out, fennel juice on its own is not my favorite, but it’s delicious with apple and carrots (also check out this green fennel juice recipe). I also added cucumber and ginger, plus a handful of collard greens, because that was what I had in my kitchen, but you can use kale, spinach or other leafy greens.
This is a great pick-me-up drink for the morning. Fennel juice has been used as a traditional tonic to help the body release endorphins, the “feel-good” peptides, from the brain into the bloodstream. Endorphins help to reduce anxiety and fear, while generating a mood of euphoria.
