Green Happy Juice (with Fennel)

I like to think of my juice recipes as a fun and experimental playground. I am always trying out different fruit and vegetable combinations to come up with a pleasant surprise. I may not get it right every time, and some vegetable juices may get a little getting used to, but in the end you can always find some tasty combinations.

Up till recently, I’ve never really tried juicing fennel, and when I tried its juice by itself, I was not impressed. However, when I tried mixing it with an apple and carrots – the taste became quite pleasant.

Seems to me, fennel can be used in many juicing recipes for both its distinctive taste and aroma, as well as the benefits to your body that fennel juice can provide. Adding just half a bulb can transform the taste of a standard carrot and apple based juice. If you like licorice then you will most likely find the aniseed flavor of fennel appealing.

Fennel combines well with a variety of juicing ingredients including apples, pears, celery and carrots. You can store fennel in the fridge for around a week. When choosing fennel from a grocers look for bulbs that are white and firm to the touch.

Fennel juice has properties that make it a useful detoxifier and also an aid to digestion. It also been used as a tonic to help the body release endorphins, the “feel-good” peptides, from the brain into the bloodstream. Endorphins help to reduce anxiety and fear, while generating a mood of euphoria – so it’s a great ingredient to use.

The main benefits of fennel juice are due to the essential oils it contains. The compound that gives Fennel its distinctive aniseed aroma is Anethole which is also found in anise and star anise.

Green Happy Juice (with Fennel)

1 fennel bulb
1 large cucumber
1 wedge green or purple cabbage
4 kale leaves
2 oranges
1 apple

1.) Peel oranges.
2.) Juice all ingredients through juicer.
3.) Pour into a pretty glass, sip and enjoy!


Fennel is an excellent source of vitamin C, folate, potassium, manganese, and fiber when eaten, and is also a good source of magnesium, iron, calcium, and niacin.
