Juicing Recipe For the Winter: Delicious & Full of Great Nutrition!

If you are just starting out with juicing, winter time and fresh-made juices may seem to not quite go together.

However, if you work with in season fruits and vegetables (of which there are still plenty) you can continue juicing for health and weight loss well into the winter. And by maintaining this healthy habit, you’ll be able fight off common colds and flues.

In the winter, root vegetables are readily available and provide lots of great nutrition, and are great for juicing.

Beets, carrots, winter squashes, celery root, cabbage and fennel are all fantastic and in-season, as well as rich in immune boosting vitamin C, the antioxidant rich vitamin A, and anemia-fighting iron. These vegetables can also reduce inflammation, up your potassium levels, and overall make you feel healthier than you ever thought possible during the winter months.  

Adding leafy greens, such as kale (another great winter ingredient) or parsley, will add even more amazing nutrients to this winter vegetable juice (and change the color too!).

Here’s a great winter juice recipe that takes full advantage of these fantastic winter veggies:

  • ½ bulb of fennel
  • 2 stalks of celery
  • 1 carrot
  • 1 small beetroot
  • 2 leaves of kale (optional)
  • 1 apple (optional)
  • 1 inch of ginger
  • ½ of a lemon


  1. Juice everything with your juicer.
  2. Add the juice of ½ lemon at the end of juicing and stir or you can peel the lemon and put half of the lemon slices through the juicer with the rest of the ingredients.
  3. If you want this to be a bit sweeter than the red beet allows, add one apple to the mix.

Fennel is great in winter vegetable juice.


Adding this amazing winter green, will boost the nutrients in this juice even further!
